We Hosted A Campsite Christmas and Here's How We Celebrated

 

We hosted a campsite Christmas and here's how we celebrated... with a delicious holiday themed breakfast! We're talking berry and eggnog campfire pancakes for our loved ones this holiday season. What's more christmas-y then eggnog, are we right? Enjoy our Christmas video and check out the recipe below!

 



 

Berry Campfire Pancakes
- 1 3/4 cups of Trader Joe's Buttermilk Pancake Mix
- 1 cup of water
- 1 egg (you can substitute 1/2 a banana for vegetarian option)
- 1 cup of mashed blackberries (or whatever berry you have on hand. Blueberry and strawberry work great too!)
- Butter for greasing skillet
- Healthy serving of whip cream for the top

Steps:
1.Start your fire and burn for 30 minutes to get hot coals cooking.
2. Whisk water and egg together in a bowl.
3. Add in Trader Joe's Buttermilk Pancake mix and whisk until batter is smooth.
4. Add in berries of your choice.
5. Grease your skillet with butter.
6. Use 1/4 cup of mix for each pancake. Bake for two minutes per side.
7. Serve with whipped cream and enjoy!

 




 

Eggnog Pancakes
- 1 3/4 cups of Trader Joe's Buttermilk Pancake Mix
- 1 cup of water
- 1 egg (or use the 1/2 banana trick as a substitute)
- 2 tablespoons of Eggnog
- Butter for greasing skillet
- Dash of cinnamon and nutmeg on top (optional)

Steps:
1.Start your fire and burn for 30 minutes to get hot coals cooking.
2. Whisk water and egg together in a bowl.
3. Add in Trader Joe's Buttermilk Pancake mix and whisk until batter is smooth.
4. Pour in eggnog.
5. Grease your skillet with butter.
6. Use 1/4 cup of mix for each pancake. Bake for two minutes per side.
7. Sprinkle cinnamon and nutmeg on top and enjoy!
